I believe there are three kinds of people when it comes to answering the question of what kind of food you can wake them up in the middle of the night for. Some people would prefer you let them sleep, some would go for something luxurious or expensive cooked by a famous chef, and some, like me, want comfort food that would immediately make them forget that you woke them up in the middle of the night.
For me, that one dish is Asian noodle soup, and for the Chinese version, I go to New King, a Chinese restaurant in the middle of Amsterdam’s China Town that specializes in Mandarin cuisine. During rush hour you might have to wait a while, and when that’s for more than twenty minutes, I will go for a drink at Stevens in Nieuwmarkt.
The menu is easy and the food comes fast. When I’m not feeling like soup or am not in a hurry, I love the steamed duck buns and the seaweed as a starter, and the roasted meats and salt & pepper shrimp for mains.
But the one thing New King does best is the noodle soup. You choose if you want a big one or a small one, the kind of noodles, and up to three kinds of meat, fish or dumplings to go in it. It doesn’t get any easier, and a couple of minutes later you’ll be diving into a deep bowl of noodles, roasted meats, and a fragrant broth.
