Scotland isn’t always known for its great food, but Edinburgh is home to a staggering number of amazing chefs from all over the world who are using amazing Scottish produce to show how beautiful our food really can be. One of my favourites is the cooking delights of Chez Roble, a paella stand found at Stockbridge Market every Sunday in Edinburgh. Their stand is not only one of my favourites at the market but around Edinburgh in general, and it is worth the journey just to sample some of their authentic, succulent and mouthwatering dishes.
I love getting to the market early just to watch them set up and start cooking, and for an avid amateur cook, it’s almost like getting a free cooking lesson, although I have to make sure I eat before as my stomach will start making some loud noises waiting for the food to be ready! I love the variety of vegetables, meat and seafood (all tastes can be catered for) and the chefs look happy while they cook – you can almost taste that in their food. It’s worth the queue: the portion size is definitely the biggest in the whole market and will fill you up for the rest of the afternoon!
My tip is to grab some, (my favourite is the vegetable one) and find yourself a spot in the sun (if possible), overlooking the beautiful water of Leith and imagine you’re in sunny Spain, it’s a great wee escape on a busy Sunday!
