If you are in the mood for a pizza while you are in Florence, please, please don’t go just anywhere and have a bad experience with acidic tomato sauce and bad, dull mozzarella cheese. If you have to choose, choose Giovanni Santarpia’s pizza heaven! Make sure to book in advance, it is really hard to find a table so call even a day before, and if you really want to go last minute, you can show up around 22:00 but it depends on the queue.
Locals love it, and have being waiting for this pizza master to come to Florence for years. Santarpia is in the center right near to the Sant Ambrogio Market place, there is an underground parking just in case you go by car. Make sure you try his pizzas of the day – my favorite is with burrata and fresh truffle, my second favorite with pumpkin.
Even if you get a simple margherita, it is an experience – they have been studying their crust for years and now it is at its prime. If you are the curious type you can sit where they make the pizza and see how they manage the dough and use the oven.
Make sure to say hi to Giovanni, and always leave some space for desert it is really worth it!
