Looking like a casual pub, every first Friday of the month, the dining room of the White Swan, becomes a fine food paradise. Each month they offer carefully picked combinations of regional wines, from well known wineries from good classics as Loire valleys or Beaujolais, to new discoveries such as New Zealand, matched with 5 different courses brings a 4 hour delightful touch after a busy week.
Brazilian sommelier Paulo takes wanna-be connoisseurs through the secrets of matching food and wine in an everyday language, witty manner and a little joke. Meanwhile, the Tasmanian head chef ensures that the most uncommon compositions of all 5 courses would perfectly match selected wines, looking rather like a piece of art and be a revelation in every guest’s mouth.
Combining the most diverse ingredients, for a second sounded like a challenge for the stomach, yet I left the building perfectly satisfied and ready for a great weekend. The hidden yet popular dining room in the heart of the City, brings a smart casual topic forward, which is great to impress a beloved one, carry a business dinner or (my case) catch up with a friend I have not seen for far too long.
It is a proof how food, wine and a little time and knowledge can turn busy after office hours into a special experience. Thus, it is my pleasure to indulge myself with a 4 hour meal in the place perfectly representing the City- an opportunity, class and diversity.
