Rubio’s Coastal Grill, simply called Rubio’s among locals, has been a favorite of mine since I was in middle school. I used to love to rush out of class and head over for a cheap yet delicious meal on Taco Tuesday’s. They’ve expanded their menu quite a bit over the years, adding gourmet tacos (shrimp with bacon, avocado and a twist of lime – si por favor!) and mouth-watering burritos with a choice of chicken, steak or seafood. They also have plenty of vegetarian options and salads for the healthier crowd.
I’m an original fish taco girl myself, and while any day is a great day for Mexican food in California, I still love to pop in for Taco Tuesdays. A side of chips and beans always hits the spot and on a hot summer day it’s fun to add a Corona and grab a seat outdoors. Since it’s located in a shopping plaza, there’s plenty of people watching!
