I’m almost afraid to post my secret jamón supply online, but jamón is for sharing, so here goes.
Deep in the center of Madrid, El Rincón Iberico has some of the best Extremaduran ham, cheese and wine at very reasonable prices. The place itself doesn’t look like much and it can fill up with a crowd if there is a big show at Sala El Sol next door, but most of the time it’s pretty mellow.
The lunch specials are a good deal for enjoying at one of the few tables in the cramped dining area, but my favorite jamón de bellota (ham made from pigs that have only eaten acorns) is amazing and goes well with a glass of red wine – and it’s all priced very reasonably. Also check out their small store on the same block.

Of course that each leg is diferent, but not so diferent. My favourite was Torres de Briz for a while (very cheap and impressive), but now is Caravaca more expensive but it deserves (once a year xd). I always look for DO “Dehesa de Extremadura”, because this DO offers more guarantee during the whole process.
Ham has seven diferent savours depending on the part.

I honestly haven’t fixated on a brand because I find that each “leg” is different. I always ask for a sample before buying – especially at the Mercado de San Miguel because I’ve found that the quality varies greatly. It also depends on what part they’re cutting from. Unfortunately I’ve never found jamón de bellota to be very affordable – it’s one of those things I buy for special ocassions.
which is your favorite jamon iberico de bellota? i’ve been scouting for a good, but cheap one, and have been semi-ripped off at Corte Ingles, Mercado de San Miguel, and the Jamones store on Calle Arenal so far.
