Vaca Nostra is a temple for meat lovers. Vegetarians and vegans stop reading, this restaurant is not for you.
In Spain we have great meats, there’s nothing better than our Iberian pigs and we also have many great cow breeds. And this is a problem if you want to eat something different, because no one in their right mind would bring other breeds from abroad! Well, Vaca Nostra does and the owners have been selling exotic meats for ages at Chamartín Market – Raza Nostra.
Not only can you eat beef and ox from all over the world, most of the meats they offer are dry-aged and this is something that’s still not very common in Spain. We’re getting there slowly, but you still have to go to specific restaurants to eat dry-aged beef.
They have fixed cuts and breeds on the menu but if you want to have the best experience, let the butcher suggest what suits best according to your personal preferences.
Their dry-aging room, in the middle of the restaurant and right besides the open kitchen, is impressive. You will be able to see all the steaks and all the information you need to know about them (origin, breed, age and weight of the animal, for how long has it been dry-aged, etc.).
