Growing up in Canada, you learn to have a strong appreciation for vegetables from a very young age. Children’s birthday parties come with the traditional chocolate cake but also include veggie tray snacks (I suggest you google it if you have no idea what I am talking about it). Living in Italy, I must say that people usually frown when they see me eating raw broccoli or cauliflower.
When my friend invited me to have dinner at a vegan raw restaurant I was immediately excited! As you would expect, Mantra has a minimal earthy ambiance and tone to match the menu.
The restaurant offers an impressive selection of entrées and main dishes entirely made of raw vegetables. I know what you are all thinking right now…How can pasta made of raw vegetables be as good as the real deal….I must say I was somewhat skeptical at first…I tried the zucchini lasagna with pistachio and ricotta and I must say my taste buds were pleasantly surprised! It was just as good as a traditional Italian lasagna!
In addition to serving lunch and dinner, Mantra also has a “market” area where you can purchase their custom made healthy snacks, smoothies or t-shirts.
I recommend this spot to everyone who can get excited about trying something new and fresh!
P.S. I am not a vegan and do enjoy a burger from time to time!
