In the heart of the city, only a five-minute walk from the very center, there is a place the locals pass by every day. Restaurant Buket has a cult status and is known as the most famous place where the journalists eat a warm stew after a busy morning. This is also a hotspot for those who partied all night and want to refresh themselves with a nutritious Macedonian meal.
As a fan of this delicious meal myself, I’ve been visiting this restaurant for several years now and it is one of my favorite places to eat. There is always the dilemma, which flavor I should get: chicken, beef or tripe stew (corba). Most often I end up ordering a mix of the last two, spiced with garlic, vinegar and finely chopped parsley and a warm home-baked bread on the side. This is the perfect caloric and energetic start of the day, which gives me strength to overcome the daily challenges.
For those who come from abroad, this is a wonderful meal to try. Although it has a simple recipe, its preparation can vary from town to town, based on the ingredients. The stew is a traditional Macedonian dish. The basic ingredient is meat: chicken, veal or tripe, spiced with fresh vegetables such as onions, garlic, carrots, potatoes, celery, parsnips and parsley. After I taste this amazing stew, I fell like I am a new woman. It’s worth trying.
