“We brew like monks (minus the vows)” is how the founder of Dovetail Brewery describe their process. The Dovetail Taproom is a delightful spot on the northside of Chicago to sample some house-brewed beers in an open industrial space.
Dovetail is known for their classic European styles, and in my non-beer snob opinion are like not-your-dad’s domestic lagers and pils. The press and beer nerds agree that their preservation of traditional beers in a modern setting is right on point. So, as you appreciate the history of beer lessons as you sample your way through the list in the taproom, you can also nosh on their in-house snacks: pretzels, cheeses and Landjäger (sausage) which is source from the local Paulina Meat Market. Or, it’s BYOF – Bring your own food for whatever mood your in from other great spots in the area! You can also check their events page for days when they have food trucks hanging out.
