Start with a beautiful building. Adorn the patio garden with flowerpots and heaters. Install your own microbrewery in the back room. Hire some friendly staff and skilled chefs. Host a quiz on Mondays. Sell half a kilo of hot’n’spicy chicken wings on Wednesdays. Do some brunch on Saturdays. Host a roast on Sundays. Prepare for a deluge of punters…
This is the benchmark set by The Bull in Highgate for opening a pub. And boy did they get it right.
The brews are predictably delicious and it’s refreshing to see such hipster staples as exposed metal pipes and jars of ingredients (in this case hops) actually being put to use. They are there to help make the beers, not JUST to look good.
I’m sure we can all agree that half a kilo of wings is probably too much for one human to eat in a night. But if Superhans (from Peep Show) were to visit on £ 5 ‘Wings Wednesday’, he would surely exclaim:
“Tell you what, these wings are really moreish.”
And not many wings are left behind come the end of the night.
