Matritum is one of the most popular wine bars in the La Latina neighborhood, and is now also where Chef José Cobos’s pop-up restaurant, Ebisu by Kobos, nests. Chef Cobos has created an outstanding omakase menu that is difficult to find with the same level of quality in Madrid.
The young chef has trained in all types of restaurants in Spain, including Michelin-Starred ones, and in Japan. He traveled to Japan to make Spanish food, but quickly fell in love with Japanese cuisine and began to train in it. That passion is reflected in his menu: 100% authentic without adaptations and with the best ingredients imported from Japan.
With Matritum’s success in curating a collection of selected wines, Chef Cobos is able to pair this omakase menu with wines from Spain and all over the world, which allows you to enjoy each course to the fullest.
