I could explain what MUTA is now, or what it has been, but I can’t tell you what it would be. As its name indicates, in MUTA everything changes. Every 5 months approximately, the concept of the restaurant, the food menu, decor and even the uniform of the waiters radically change.
As they explained to me, the time that a concept remains depends on the public, if people like it, it will stay longer but when they start to ask for a change, they start working on a new one. It’s the perfect way to taste different meals from all around the globe in just one place.
It all started with the unique “Sala de despiece” by the culinary mastermind, Javier Bonet. The restaurateur who transformed Ponzano street, in the “castizo” district of Chamberí, into a new trendy area for people looking for original gastronomical offers with great quality (#Ponzaning).
The first one was “Muta Brasil”, then “Muta Norte” (from the north of Spain), followed by “Muta Balear” (from the Balearic islands) and the last and most successful one: “Smoking Club”, where the food is smoked in a special oven for hours. In fact on the menu they will specify how many hours the meat has been smoked.
Like all of Javier Bonet’s inventions it has become a popular place on weekends, so if you don’t want to miss a spot I would recommend you make a reservation.
