If I’m nowhere to be found, but it is known that I am in Paris, then in 9 cases out of 10 I’ll be at Circus. Circus Bakery doesn’t have a sign, and it doesn’t really need it, for it is easily found thanks to the heavenly smell of cinnamon buns – their signature sourdough delicacy. They also offer plain sourdough bread, rye bread, pumpkin seed rolls, small apple pies, and chocolate buns. Recently, they have launched a new treat: from 5 p.m. daily fresh pizza is baked in a wood-fired oven.
Circus has a very simple interior — Scandinavian minimalism is the basis for its decor and baking. Since it is a sister spot of the specialty coffee place Fragments (located in Le Marais), there is a coffee machine to make an aromatic cup of café allongé to go with that cinnamon goodness. But most importantly, the guys who work behind the counter have the kindest hearts of all. They all come from different countries, adding to that very open international atmosphere of Circus. I love Circus for its simplicity, people who visit it, and, clearly, the cinnamon buns.
