I have never understood the Illuminati conspiracy, and it is not very talked about here in Italy. In fact, Illuminati is an Italian word meaning enlightened, used in the literal sense about places where there is light. Of course, if you want to believe that there is a secret society that holds the recipe for a pizza this good, I could honestly believe you. Because the pizza is that good. In fact, Seu Pizza Illuminati is, in my not so humble opinion, the best pizzeria in Rome.
No other pizza in Rome combines a perfect, light dough together with amazing ingredients. The menu is seasonal so I cannot recommend any specific pizza, but everything I have had has been mind blowing. I always recommend getting one pizza each, plus one for the table and share them all, to try a little bit of everything. This is not American pizza: you can handle one.
A great pizzeria doesn’t only have great pizza: all the fried appetizers are crisp and very special, and this place offers a very well selected collection of wines and champagne together with a very respectable selection of beers. The prices are higher than your average pizza place, but it is definitely worth it. It is not your usual pizza experience and I am very glad for that.
