The café’s open kitchen is the first thing that strikes you. Chefs move swiftly behind the counter, preparing bowls of steaming ramen, crispy fried bites, and fragrant curries. It reminded me of small eateries in Hong Kong, where the clatter of pans and the smell of soy and ginger are as much a part of the experience as the food itself.
