Heads & Tales is a little different from the other cocktail bars in town (check Monteiths and Panda & Sons articles) as Edinburgh Gin have installed two stills inside so you can learn all about gin or watch it being made while you sample the end result.
The bar is filled with reminders of the gin making - barrels have been turned into seats and copper piping traces the walls. It's a great spot to settle in for a couple of drinks and feels miles away from the hustle of Prices Street.
There's wine, beer and other spirits on offer but really the gin cocktail menu is the only place to order from.
You can build your own gin cocktail by choosing the gin and flavours you like and letting the bartender work their magic. Alternatively there's some suggested cocktails, like my favourite, 'Go with the Flo' which has my new discover, Edinburgh Seaside Gin, in it.
Whether you stop in for a tour of the distillery or just for a cocktail or two Heads and Tales is the perfect place to try expand your gin knowledge.
Sometimes when they're open late the door may be shut but as long as there is a green light above it you can ring the visitor bell to get in.
