When you visit Florence you can't miss the chance to taste a sandwich with lampredotto, the classic, popular Florentine sandwich. In Florence, the lampredotto (tripe and entrails) is an institution and you can see it by yourself during lunch time. The better way to taste it is in one of the kiosks around Florence. You can easily recognize the best ones by the length of the line in front of the kiosks waiting for their Panino and a glass of red wine! All kinds of people are used to stopping for a panino, so you'll find elegant, well-dressed people next to bricklayers during their lunch break, or students.
I have two favorite kiosks: the one in Sant'Ambrogio district ("Tripperia Pollini" in Piazza Sant'Ambrogio / via de' Macci), right in front of the Cibreo Restaurant; and the other one is near the Loggia del Porcellino ("Orazio al Porcellino" in Piazza del Mercato Nuovo angolo via Capaccio Firenze). This one is quite hidden, even if it is in one of the most touristic area.
