This is my Florentine mom n’ pop pizza shop. The ingredients are 100 % organic and the dough is kneaded with the utmost care and passion. You can choose between a base made of Kamut (an ancient grain), a gluten-free flour blend, or a traditional Italian wheat-flour. Most pizzas are made with a pasta madre (sourdough) and are concocted with what seems to me, a chemist approach.
I remember when they were developing their home-made gluten-free dough. I kept asking, “when can I try it?” And their reply, for about 6 months, was “it’s coming, it’s coming, we are perfecting it!” Which to me, meant is was a pizza worth waiting for. In fact, it was!
When I find a place with incredible dough, I love having the most basic topping, alla marinara—simply tomato sauce, oregano and garlic. However, there is plenty to enjoy in terms of their more complex pizzas. They have a vast menu of creative toppings, including loads of vegetables, high-quality cheeses and organic meats. And a plus, they have a nice selection of organic beer that you can take to-go.
FYI, their menus is entirely to-go or for delivery. The shop is right next to the Villa Strozzi park, so I would recommend taking your meal up the hill for a pizza-picnic.
