While in Florence, make sure to spend a night out in the Santo Spirito area, even if its is chilly, there are so many people it is not a problem. This is where all the locals go out at night and have nice dinners, drinks and hang out. Trattoria Sant'Agostino is right on the street going to the piazza and it is a perfect spot for a Florentine meal before drinks in the piazza. It has some traditional dishes that stay the same and some that change based on the season. Don't snack before you go, an empty stomach is the right way to visit this restaurant.
The meat is very good and well priced for being in the center, you can have a tagliata (a steak already cut that is a typical dish), a hamburger of Chianina (a special type of meat from the area), or a tartare, and don't forget to get roasted potatoes on the side.
One of their special dishes is onions filled with pecorino cheese and baked in the oven. Another specialty is Peposo, a Tuscan Stew with a lot of black pepper that I would recommend to eat only in the winter. Trattoria San'Agostino has an interesting wine menu with mostly local Tuscan wines - I prefer a red Bolgheri (Baia al vento or Campo al mare) it pairs great with the meat!
