The Hiltl restaurants always were a bit ahead of their time, serving vegetarian cuisine for more than a hundred years. If it was hard in the early 90s to convince most of the Swiss population that a vegetarian diet could be healthy and tasty, the family business somehow managed its way across generations beautifully and definitely influenced Zürich citizens' perception of vegetarianism.
Probably more popular than ever now, at Hiltl you will find a wide array of delicious meals at their buffet. With the most advanced product labeling I have ever experienced in any restaurant, you can still find something for your taste with most food allergies in mind (gluten, lactose, lupin, nuts, soy, egg, mustard, celery, garlic, etc.). I hope other restaurants will copy their labeling system as it makes life easier for so many people! They of course also offer vegan options. I liked every dish I tasted from their assortment. The only drawback is that it is not so budget friendly (you pay for the food of the buffet by weight). However, they always put the leftover of their buffet on the "Too Good To Go" app, and there you can find especially good deals with enough, delicious, food for two at a very low price.
Finally, I personally like the industrial look of their restaurant at Sihlpost, which is also very well located. You can find on their website the four other permanent locations in Zürich. Have a good meal!
