The numbers are shocking – according to the World Food Organisation FAO, about one third of the food produced gets lost or wasted. There are many steps we can take to minimize that problem: one is to sell fresh goods, even a day after they expired. And that’s exactly the idea behind Ässbar.
The shop sells perfectly fine bread, sandwiches, pastries etc. for a reduced price.
Like that around 40t of food are saved from the bins of bakeries in and around Bern each year.
Since I discovered Ässbar, I haven’t been to any other bakery! It’s super centrally located in a cellar in the heart of the old town, the staff is very helpful and well informed if critical eaters like me have questions about the ingredients of each product.
And: Even if Ässbar doesn’t sell all the baked goods, they still don’t create food waste: In the evening, everything that is still on the shelves is passed on to charity organisations.
The concept of Ässbar seems to find many supporters, in September 2019 they were able to open a second shop in the Länggass neighbourhood.
