As I walk through Pike Place Market I always see people gathering outside the giant display window featuring the cheese being made in-house.
I always try a few samples and get myself some flagship mac and cheese. There are a number of sandwiches displayed on the chalk board, from the grilled cheese, to the smoked turkey and the Dungeness crab. The fresh curds are amazing for making poutine. Don't overlook the soup.
Located in the bustle of the market, this is the kind of place where you will want to take family and friends from out of town and actually boast about the authenticity.
Most locals have a block of Beecher's flagship cheese in their fridge at all times.
It’s fun to watch the cheesemaking process and eat the creamy penne. Seating is limited so I would suggest grabbing and going.
