Pekarna Osem, a small bakery with soul, is located in the heart of the Old Town. It is run by Andrej Gerželj who is in love with bread. He gets up at 5am every day to prepare fresh bread and make it ready by 8am when the bakery opens its doors. Customers are very important to Andrej so during his work he tries to take some time and make small talk with everyone who comes into Pekarna Osem (Bakery Eight). The young baker with a big smile on his face and sparkling dark eyes starts baking every weekday at six in the morning. He opens the doors of his bakery two hours later, at eight, when the smell of freshly baked bread spreads down the street.
Learning from French, Dutch and American bakers he developed his own yummy recipes. I've tried crunchy bread with cheese and the one with walnuts and coffee. Tasting products created with love and made of local flour with no artificial ingredients and colors, this officially became my favorite bakery in Ljubljana! They just recently moved to a new location, but I guarantee you definitely won't regret a stop in this charming, and a bit nostalgic, bakery with great energy where you get served bread in specially designed white paper bags.
And just a friendly advice - don't be too late. They might run out of delicious bread before the official closing time! :)
