There's a tiny little place in the Historic Center that seems to have always been there. It may be its old-fashioned decoration or its regular customers. Surprisingly, it was just opened in 2018 and reopened in September 2019 after being closed for some months. Since then, they've become increasingly more popular among the chilangos, and with good reason. They offer one of the most delicious results of gastronomical fusion: Arab tacos.
This delight was created by the Assyrian-Chaldeans that arrived to Puebla, Mexico, during the 1920s. They adapted the Middle-Eastern shawarma to the Mexican taste by using pork instead of lamb and by wrapping it in corn tortillas. At Baltazar, we also find these tacos with flour tortillas and flatbread. They also offer great falafel (it comes in a flatbread and yogurt dressing), jocoque, and the Mexican favorite: chilaquiles.
Although I usually have a beer when I’m having tacos, every time I come to Baltazar I prefer drinking their aguas frescas: lassi (yogurt drink with cardamom) and agua de jamaica (hibiscus drink with peppermint). Go as early as possible to avoid waiting in the line.
