Chilaquiles is one of the most typical Mexican dishes. The recipe is easy: dried or fried tortillas, hot sauce, cream, cheese, onion and an optional portion of beef, chicken or egg. These ingredients are often repeated in the Mexican cuisine but the flavour of chilaquiles is unique. Hijos del Maíz is a restaurant specialized in this famous Mexican dish. There you can find a big assortment of exotic ingredients and hot sauces to dunk the tortilla into.
Every time I visit the place I try a new sauce, yet my favorite is still the green one. It's hot enough and has a wonderful taste mixed with cream and cheese. It’s well known that chilaquiles are one of the best remedies for hangover. I don’t know if that’s actually true but I keep on trying. And at the end of the menu there’s a sweet surprise: chilaquiles with caramel and ice-cream. That’s weird and I don’t like it but maybe someone does.
