Broadly unknown outside Mexico due to the impossibility of industrializing its production, pulque is a drink that you will only be able to try while being in Mexico and, despite the negative comments you may hear about pulque – resulting probably from the smear campaign that the breweries once carried out – I believe that anyone who’s interested in Mexican culture should try it.
I would like to recommend trying it at La Paloma Azul, a pulquería that produces delicious curados (flavored pulque) of all kinds. In the table at the center you will find a basket with tortillas to accompany your drink with a taco of salsa – a simple pleasure that every Mexican enjoys. It is not uncommon to find a woman selling snacks – hard-boiled eggs (we eat them with lemon, of course, and salsa Valentina), toasted fava beans, and peanuts. Like in most pulquerías, music is played from a jukebox and tables are shared between the customers.
All this bring about a chummy environment that makes it easy to enjoy pulque.
