Most foreigners will notice that Zagreb is the city of bakeries; there are bakeries on every corner, some of them even powerful chains. Bakery products are by far the most popular fast food for locals. I myself am not a huge fan of bakeries and find most of their products have a bland and artificial taste, but I became a fan of one bakery which opened in 2016 – Korica, a bakery that is much more than just a quick and cheap means to satiate hunger; it’s a place to savor the taste.
Korica is an artisan bakery, all products are handmade using traditional methods. The wild yeast culture used is older than 40 years, and the dough ferments and develops for 48 hours before baking, which results in a rich flavor and texture. Without any additives, enhancers and unnecessary mechanical treatment, the final bread product is comprised purely of flour, water, yeast and salt. In Korica you can also sit down for coffee in a pleasant, minimalist ambiance permeated with the wonderful smell of freshly baked bread. It’s usually crowded in the morning hours – the place is simply too good to be kept secret.
Like in every gourmet place, the focus is on quality, not quantity, so the range of products is not super-wide, but everything you can find on their shelves is delicious – from classic baguettes to the trendy “cruffins” (mix of croissant and muffin), from quiche and lemon pie to the incredible almond croissants - my personal favorite.
