Salmon Guru has only been open for a short time but it has already become one of my favourites signature cocktail bars in Madrid.
Located at the heart of El Barrio de Las Letras, its decoration is exquisite. The entrance is like an antique licor store with shelves full of original old bottles. Once you've crossed the door you will find yourself in something like an old New York club from the '60s: that's the bar area surrounded by the low retro velvet chairs. The second space is more eclectic (my favourite!): neon signs inspired by comics, fluorescent lights (a tribute to the classic Schweppes neon in Gran Via) and a big shared table. The last and smallest one in the back is a more intimate space with dim lights.
About the cocktails: they have the classics with a twist, the sparkling ones, and of course the signature cocktails by Diego Cabrera, the founder of Salmon Guru, a true alchemist considered the "maestro coctelero" of the moment in Madrid.
Besides that, they have some starters and plates to share, like croquetas, hummus, tortilla, homemade sandwiches with traditional bread, and desserts!
Last tip: don't forget to observe and look for all the hidden details on the walls: a vintage "tongue anatomy" poster, small pieces of art for starters. The rest is for you to discover...
