Vancouver has a thriving food truck scene with new, fantastic food trucks arriving all the time. Below are some of my favorites but unfortunately they are constantly moving so you may need to do some Googling to pinpoint them exactly:
Mom's Grilled Cheese – Mom's serves up some incredible gourmet grilled cheese sandwiches. With a selection of breads and cheeses and add-ons that will leave you salivating.Â
Yolk's – Yolk's serves up incredible breakfast dishes all over the city. The quality and complexity of the dishes that this truck produces always leaves me dumbfounded. I don't know how they do it but they make great breakfast in a panel van. Yolk's also has a great restaurant (check the Yolk's article).
Vij's Railway Express – Vij's is one of the most well known restaurants in Vancouver. Less well known is the Vij's food truck but the food truck is so good. They do a range of dishes that bring together different cultural flavors like the butter chicken schnitzel.

They have a dedicated affogato bar that lets you customize your affogato with whichever ice cream you want and you can even add a shot of liqueur.
